The Capunsèi, also known as "Bread dumplings", are a cardinal dish of the poor cuisine of the upper Mantua, especially of Solferino and the Morainic Hills.

With a tapered cylindrical shape, in ancient times they were a recovery preparation made with stale bread and what was left over in the kitchen.
Today, however, stale bread is always used but with the addition of selected ingredients such as eggs, Grana Padano, garlic, parsley and spices, which expertly kneaded, are served with poured melted butter and sage and thus become a rustic and substantial dish always appreciated. and requested by adults and children.
